What a way to mark a year of cooking in Yangon: the Spoons are mobile and now offer our cooking classes and kitchen care training in your home kitchen. 
​Domestic employees get one-on-one practical training in their place of work preparing a healthy meal cooked with care for you to enjoy. 
It's a great value way to invest in capacity building with no down time - and you savour the results. ​

No problem! The Spoons can bring the ingredients to class for a reasonable charge OR accompany your domestic employee shopping to help buy what's needed for your selected home-cooked meal. 

Can I book a Certificate course?

Yes! The Essential Spoon Certificate offers excellent value and trains in your home kitchen. Since going mobile, we have had several trainees complete 27 hours of 1-on-1 training to receive their certificate.

The Spoons run on a not-for-profit model. We have directed all earnings from our lessons to salaries for Myanmar local staff, operational costs and free training in our first year.

Hello!

The Myanmar proverb - One sesame seed does not make oil - reminds the Spoons to take learning in the kitchen step by step and to celebrate progress as it comes. It’s also a helpful message for householders who employ domestic staff: if you understand there are inconsistencies in your staff’s education and life experience, you will likely hold fairer expectations of them and better recognise their skills and competence.
...there could be a trainee who knows that you put out a fire by 'starving it' of oxygen, yet has not been taught that germs are transmitted mainly by touch.

As trainers, the Spoons remind ourselves before each class not to presume the knowledge and skills of the cooks. In a single class, there could be a trainee who knows you extinguish a fire by 'starving it' of oxygen, yet is not aware that germs are transmitted mainly by touch. Or someone might never have used a microwave yet their classmate knows how to use the auto defrost setting to safely thaw frozen meat. Most 'wing it' when baking because they've never learnt fractions (we teach this in our Use with Care class). Some have only limited Myanmar and English reading skills, so they read a bit of both (or listen and watch closely) to prepare a recipe. Talk about courage in the kitchen!

The Spoons have commenced a community education project - “My Fresh Kitchen” - in partnership with the Yangon Kayin Baptist Women’s Association. In 2017, we plan to:
  • convert the Association's Ahlone HQ kitchen into a working example of a modest, hygienic, well-organised Myanmar space
  • use the process to educate women about hygiene, nutrition and kitchen safety
  • train 20-30 women from rural areas so that they can develop skills for decent work as 'apprentice' domestic cooks 
  • PLUS, develop a competency-based training curriculum that will cover essential skills for domestic work.
​We have funded half of the project ourselves and are seeking support from donors and the community, either in-kind or financial. For more information, please contact Alison Carter at threegoodspoons@gmail.com

You don't know what you don't know

Hello!

In a place where job security is essential and the 'need to please' prevalent, it makes sense that a domestic employee might resist an employer's offer to attend training, perceiving it as message they're performing poorly.

​A client recently cancelled a planned class
 because the potential trainees had claimed they 'did not need it'. Yet none of us know what we don't know! And bad habits are hard to break. Just look at the public health campaign in the United States against washing chicken in your kitchen sink! (The Spoons cover this topic in our Handle with Care class.) 
...none of us know what we don't know! And bad habits are hard to break.
Training is so much more than a response to lack of capacity. It is an opportunity to develop new skills and knowledge. It can be a nice escape from the daily (spice) grind. It can be a reward for a job well done. It can build confidence and social networks. It can provide a career pathway or simply a basis for earning a decent wage. Thanks for stirring it in and sharing it out

The burnt chop

Hello!

​I usually think about my Mom when I’m in the kitchen or delivering a nutrition class. She sparked my love for good food and cooking with care, having set the example of a busy working mother who always told me to eat my orange with my scrambled egg breakfast. (The Spoons teach trainees why this combination is important in our Nourish with Care class.) Like so many mothers, mine tended to sacrifice the tastiest morsels for her family. We jokingly coined this ‘the burnt chop syndrome’: putting others’ needs before your own.
It’s the value of ‘burning a chop’ or making a mistake in order to master a skill.
Now in the Spoons kitchen, I’ve come to embrace this concept in a different way. It’s the value of ‘burning a chop’ or making a mistake in order to master a skill. Doing is learning. That’s why we encourage all our trainees to chop, stir, fry and bake their way to being a more capable cook. I don’t panic if a cake breaks when a trainee hastily shakes it out of a tin. Sure, it’s a shame, but it’s also an effective way to demonstrate why you need to take care with freshly-baked cakes! Giving constructive feedback is just as important as providing the opportunity to learn. I hope your cook is benefitting from practising new recipes, even if there’s a burnt chop in the mix now and then.

Pasta sauce master class is on again in July and August, The sauces pair perfectly with dry instant pasta but if you wish to try fresh Pasta Fresca products, click here.
Vegans/Vegetarians/Pescetarians and anyone who likes a delicious creamy curry can sign up to learn a tasty Sri Lankan-flavoured dish using chickpea balls or salmon fillets.
Our Vegetable moussaka class is back in August with a step-by-step feature on soy bechamel sauce as an option.
Salad days are back now that more leafy products are available via Fresco delivery and at Go Green. Satisfying salad classes are scheduled in August.
Seafood lovers can give new domestic supplier PoissonYangon a try and send their cook to learn Golden crusted fish with lemon zest and fresh herbs.

Gluten guts

Sharky’s sells gluten-free bread and now also Teff for about 4 000 MMK for a 300 gm bag. (Teff is a staple grain in Ethiopa and the main ingredient in the flatbread, Injera.) Pasta Fresca makes fresh pasta right here in Yangon and offers gluten-free products. The Spoons will keep offering vegan and gluten-free recipes each season.
